Menu Monday

I'm back in Small town, Virginia after an awesome weekend in Tennessee. I came home to a clean house, thanks to my wonderful husband's hard work!

Now it's back to work preparing for the week and a camp trip that leaves on Friday...so excited! So to help me feel organized, here's my list of what's on the menu for dinner this week.

- Portobella mushroom burger with roasted red peppers.
- Spring chicken roll-ups (ham, provolone, and asparagus) and Lemon Dijon pan sauce.
- Spinach Artichoke penne
- Salmon cakes with garlic roasted potatoes
- Chicken and Kielbasa rice

I'm quite sure this will be a busy week with much fund-raising left to do before camp, so I'll have to plan my time well to get all these meals made :)

  3. You're like a freakin gourmet chef. You're Monica. After 7 years (almost) of marriage, Alan's never even come close to having a week (um, or a day) of meals like that. VERY impressive.
    Just said a prayer for your camp trip. =)
